Get into the Mardi Gras spirit with this Carnival Catfish.  Using the unique flavored chips of New Orleans as a coating makes this catfish extra jazzy!

Ingredients:

4 Guidry’s Catfish Filets (thawed)

3-4 cups Chee Wees or your favorite chips

2 eggs

1 cup olive oil

Method: 

Preheat oven to 425 degrees. Line a baking sheet with parchment paper and spray with nonstick cooking spray.

Grind the chips in a food processor at high speed until the size of breadcrumbs. 

Remove the chips from the processor and place them into a medium size bowl. Set aside.

Beat the eggs and oil. Set aside another medium size bowl.

Press each fillet into the egg mixture.  Dredge the fillet in the chip breading, pressing gently to thoroughly coat each side. 

Place filets on baking sheet and bake for 10-15 minutes or until the internal temperature is 145 degrees.
