This easy and quick appetizer is perfect for the holiday season! Tender catfish nuggets are cut into bite size pieces, dredged in Guidry’s Fish Fry, and bathed in a sweet and spicy pecan pepper jelly glaze. Catfish can also be cooked in your air fryer (follow manufacturer guidelines)
Ingredients:
1 lb. Guidry’s Catfish Nuggets
1 pkg Guidry’s Fish Fry
2 cups cooking oil if frying
1 cup Pepper Jelly
1 lemon juiced
½ cup chopped pecans
Chopped fresh parsley
What to do:
1. Preheat oil in a small fryer if frying.
2. Cut Catfish into 1–2-inch pieces. Dredge the catfish in egg wash. Dredge the catfish in fish fry, pressing to coat evenly.
3. Cook the catfish at 350 degrees for 5-7 minutes. Catfish should float to the top when done. Place on a paper towel lined plate.
4. Make the pepper jelly sauce: Add pepper jelly to a small pot. Add lemon juice. Cook for 1 minute or until the sauce is simmering and thinned out. Remove from heat and add pecans.
To Serve: Toss the sauce with the catfish in a small mixing bowl. Serve on a platter and garnish with fresh parsley.
