ADITIONALS TOSTADAS TOPPONGS:

  • 5 Guidry’s Catfish fillets
  • 2 tbsp paprika
  • 1 can sweet corn-drain
  • 2 tsp ground cumin
  • 2 avocados cubed
  • 2 tsp onion powder
  • 1 small red onion diced
  • 2 tsp garlic powder
  • 2 limes juiced
  • 2 tsp dried thyme
  • 4 tostadas
  • 2 tsp dry mustard
  • Fresh Cilantro
  • 1 1/4 tsp Kosher salt
  • 2 limes juiced
  • 1/4 tsp cayenne pepper
  • 1 cup sour cream
  • 2 tbsp extra virgin olive oil
  • 1 cup cotija cheese

Method:

-Mix sour cream and lime juice in a small bowl and set in refrigerator.

-Mix all seasonings together in a small bowl.

-Pat the catfish fillets with a paper towel to dry.

-Season catfish filets with the blackening seasoning. Set it aside.

-Mix corn, avocado, onion, and lime juice together in medium bowl.

-Set aside to marinate for 10 minutes.

  • Heat olive oil on med-high heat in a cast iron skillet.
  • Place catfish in skillet and cook 4 minutes on each side.
  • Place on paper lined plate to rest. Wrap tostadas in paper towels and warm in Microwave.

Assemble tostadas with blackened fish and Avocado Corn Salad.

Top with fresh cilantro, cotija cheese, and Lime Crema.
