Ingredients:

Guidry’s; Random Cut Catfish fillets(thawed)

¼ cup Coconut Oil

1 cup of corn meal

1 cup seasoned flour

½ cup coconut shavings

Salt

Pepper

3 eggs 

1 cup coconut milk

Directions:

1. Put 1/2 in of coconut oil in a cast iron skillet and heat until hot. 

2. Cut the catfish fillet into strips.

3. Combine 2 cups of corn mill, 1/2 cup of coconut shavings, a little salt and pepper into a bowl. 

4. Beat 3 eggs and coconut milk in a bowl.

 5. Dip catfish cubes in egg mixture.

 6. Roll in corn mill and coconut mixture.

 7. Fry for about 2 minutes per side.
